A new Survey and Certification Letter announces new dining practice standards. While not new requirements, the letter urges providers and surveyors to be aware of new dining practices. It urges caution with restrictive diets for certain diseases. Research shows seniors with chronic conditions do not benefit much from sugar and sodium restrictions. The standards call for a “regular” diet to be the default except in rare cases when restrictions are necessary.
